Tora Shiro

Tora Shiro !!! It is not a character from Mortal Kombat or Tekken. In Konkani, Tora is “raw mango” and Shiro is “slices of silver”. Also, commonly known as Raw Mango Water Pickle.

Preparation of Raw Mango Water Pickle is an early affair at MyVillage Anjuna. In Anjuna, we get a good lot of local mangos (keri). We pluck them at the right time, which is key. We then take the keris to our village ladies who have been preparing this delicious recipe for years.

The process is as mentioned below:

  • The raw mangoes are washed and kept aside
  • Then filtered water is put into a large jar and some of the traditional┬álocal ingredients are added to the water and mixed well.
  • The mangoes are now added in and mixed well for a good 20 minutes
  • The jar is now sealed and left undisturbed for a minimum of 10 days allowing the raw mangoes to soak in all the flavours

When the jar is opened up you get a fragrance that surely gets your mouth watering. The pickle is then packed into bottles which are then sealed and sent to the local markets.
